This is an easy recipe to cook the loin of pork in a delicious way. Chine has few fat, so it could be a little tough. This is a South Italy recipe, part of the so called poor kitchen. Taste it, you will be surprised of it’s amazing flavour. Can be eaten also in some diet as Atkins and other low carb diet.
Ingredients
- 2 red onion
- 2 red pepper
- 1 spoon of olive oil
- Garlic
- Hot pepper
- 1 pound (1/2 kg) of loin
- A little bit of triple concentrated of tomato or 2 small tomato.
Instructions
- Cut the onion and the red pepper as in the following pictures.
- Put them in a large pan with one spoon of extravirgin olive oil (or different oil, I prefer the extravirgin because is more healtly).
- When the pepper become a little softer add the chin of pork, a little bit of garlic and if you like it some hot pepper and stew for 5 minute.
- Add half glass of water and a tea spoon of triple concentrated of tomato, or in alternative 1 chopped tomato or simply tomato sauce. Cook all togheter for 15 minute.
