Italian risotto requires a special cooking. Maybe you have to spend a little bit of time to cook well the rice, but i can assure you is well spent time. All ingredient will release their flavour to the rice wich will become soft and tastefully. If you want to taste that delicious risotto follow the instruction.

Risotto with Asparagus and Sausage

Ingredients

  • Rice
  • Asparagus
  • Sausage
  • extravirgin olive oil

Instructions

  • Prepare 2 liter of vegetable broth or let boiling 2 liter of salted water you will use later for risotto.
  • Chop the sausage in small pieces.
  • Cut asparagus into small pieces after you've eliminated the hardest part in the bottom and boil them into very few salted water until all water is evaporated.
  • Now add 2 spoon of oil and the chopped sausage and cook all togheter for 5 to 8 minute.
  • Into another pot, toast the rice with 2 spoon of olive oil
  • When toasted and brilliant, add the cooked asparagus and sausage.
  • Pay attention, the broth you've prepared before must boiling, so don't off the heat under the broth's pot.
  • Now add two ladle of boiling vegetable broth or boiling water at time and stir until broth is absorbed by the risotto.Continue to add two ladle of broth at time for 15-20 minute, until rice will be well cooked.
